30gboiled chana / chhole
20g (1 cup)puffed rice (murmura)
40gsweet corn
1 tbsptamarind chutney
1 tbspmint chutney
2 tbspcurd
30gcarrot, grated
30gtomato, chopped
30gonion, chopped
1/2 tspcumin powder
1/2 tspchaat masala
1 tbspsalt, pepper, chilli powder (mixed, to taste)
1/2lime, squeezed
handfulfresh coriander, chopped

Step 1
Pan-roast or air-fry the paneer cubes for 4-5 minutes until lightly golden and crisp on the edges. Set aside to cool slightly.

In a large bowl, combine the boiled chana, sweet corn, chopped tomato and onion.

Add the grated carrot and curd, and mix gently so the curd coats everything lightly.

Sprinkle in the cumin powder, chaat masala, salt, pepper and chilli powder. Toss to combine.

Drizzle the tamarind chutney and mint chutney over the top, then squeeze the lime juice over everything.

Fold in the puffed rice and the roasted paneer last, right before serving. Garnish with fresh coriander and serve immediately while everything is still crunchy.

Serves 2. Roast the paneer separately and fold it in last — tossing raw paneer straight into the curd and chutney softens it and you lose the crunch. Same goes for the puffed rice: add it right before serving, not earlier, or it goes soggy fast. No frying, no sev needed — the crunch comes entirely from the roasted paneer and puffed rice, which keeps this genuinely light.
