1 cup dates, pitted
1/2 cup roasted peanuts
1/2 cup rolled oats
1 tbsp cocoa powder (optional)
1 tbsp chia seeds
2 tbsp peanut butter
pinch salt

Soak dates in warm water for 10 minutes if they're dry, then drain.

Add dates, peanuts, oats, cocoa powder, chia seeds, peanut butter and salt to a food processor.

Pulse until the mixture comes together into a sticky, thick dough.

Roll into small balls (about 12-14 pieces) using your palms.

Refrigerate for at least 30 minutes to firm up before serving. Store in an airtight container for up to a week.
