Healthy Jaggery Oats Cake

1 cup Rolled oats
¾ cup Whole Wheat flour
½ cup Powdered Jaggery
¾ cup Thick curd
¼ cup Milk
⅓ cup melted butter
1 tsp Vanilla essence
1 tsp Baking powder
½ tsp Baking soda
½ tsp Cinnamon powder
2 tbsp Chopped almonds
Pinch Salt

Step 1
Blend rolled oats into a slightly coarse powder for a better homemade texture.

In a bowl, whisk curd, jaggery, milk, oil and vanilla essence until smooth.

Add oats powder, wheat flour, baking powder, baking soda, cinnamon powder and salt. Mix gently into a lump-free batter.

Fold in chopped almonds or nuts of your choice.

Grease a baking tin and pour the batter evenly.

Bake at 180°C for 30–35 minutes until a toothpick comes out clean.
